She was born on May 12, 1954 in Wichita Falls, Texas, the daughter of Noel and Lucille Assink.
After graduating from Capiah Lincoln Junior College, where her father also later retired as a professor, Kathy began many adventures and travels, including being a disc jockey from Bangkok, Thailand for the troops fighting in Vietnam. Afterward, Kathy attended Louisiana Tech in Monroe, Louisiana. While there she was baptized into Christ.

Kathy earned a master’s degree in teaching high school science. She concluded her acts of public service as a volunteer grandmother in a program at Cabool Elementary School where she won the hearts of many children, fellow volunteers and teaching staff alike.
